专利说明:
USE OF HORSE MILK TECHNICAL FIELD The invention is in the field of horse milk and foods, in particular cocoa-containing products, such as chocolate. The invention relates to a new use of horse milk. TECHNICAL BACKGROUND On the one hand, horse milk is attributed numerous health-enhancing properties, especially in the field of bowel and skin disorders. A study by students of Wageningen University presented on 14 December 2006 in Wageningen shows that horse milk can have a beneficial effect on diseases and conditions such as eczema, psoriasis and Crohn's disease. A summary of the report is available on request from the cooperative association of cooperating horse milkers in the Netherlands and Flanders (SpaN-V). Because of these health aspects, products based on horse milk are available in many drugstores and health food stores in the Netherlands and Flanders. The majority of these are in the area of scalp care, such as shampoo, soap and cream, but horse milk is also sold in the form of capsules, for example. Despite the supposed beneficial effect of mare's milk, only a limited market is achieved. There is therefore a need to make horse's milk accessible to a larger audience and to make the intake method more pleasant. SUMMARY OF THE INVENTION It is an object of the invention to provide a food or supplement with health-improving properties that is easily accessible to everyone and for which existing dietary patterns do not have to be adapted. It is also an object of the invention to provide a new use of mare's milk, and to make mare's milk easier to access. The mare's milk can be used in any food, provided that the food is not a bakery product, and in particular no bread. Although not necessary, it is preferred that milk ingredients, in particular milk itself, already form a normal constituent of the food. By replacing (in part) the conventional cow's milk with horse's milk, the product perception and proportions of original components are hardly changed, if at all. In one aspect the invention relates to sweets and dessert products that often have an unhealthy image. The use of horse milk gives such products an attractive character due to the possible health-promoting aspects. An important category of food products in which horse milk is successfully incorporated is formed by chocolate products. Chocolate in particular is an example of a food product with a bad image that can be improved by adding horse milk. In another aspect the invention relates to the combination of cocoa and horse milk for use in foodstuffs. This concerns food containing cocoa, with cocoa being the main component, or products in which cocoa is used as a flavor enhancer or enhancer. Horse milk can add health-promoting properties to it. It has now been found that a foodstuff containing horse milk as an ingredient meets the aforementioned needs. Compared with cow's milk, horse's milk contains relatively little fat and, moreover, largely unsaturated, and a lot of lysozyme (this increases the resistance). In addition, mare's milk contains immunoglobulin (helps with a spastic bowel or Crohn's disease), glutamine (helps with diabetes) and omega-3 and -6 fatty acids (ao good against cardiovascular diseases). Horse milk also contains relatively much vitamin C. This makes it attractive to add horse milk as an additional component, but especially to replace at least part of the cow's milk. Experience shows that a food made (with horse milk gives an improved bowel movement. Such foods also provide a simple and pleasant way for people with diseases and conditions such as eczema, psoriasis and Crohn's disease, or symptoms thereof, to use horse milk. Advantageously, a horse milk-based food also offers a good alternative for people with a cow allergy who need such foods. DESCRIPTION OF THE INVENTION As stated, the invention extends to numerous foods except bakery products, in particular bread. By bakery products is meant those products which in their preparation comprise a rising and baking step, such as cake, bread, cake, cake, and in which the horse's milk is pre-mixed in the batter. On the other hand, the mare's milk can again be used to coat such a bakery product with a mare-milk-containing coating layer. Horse milk is preferably used as horse milk powder. In the horse dairy farm a portion of approximately 70 kg of horse milk powder is extracted from approximately 750 kg of horse milk, often by conventional freeze-drying. spray drying; preferably without the addition of preservatives. This is then freeze-dried or spray-dried. The solid components present in mare's milk can therefore be concentrated by about a factor of 10 in mare's milk powder. Milk powder is generally known to improve the shelf life of the milk, making it easier to apply on a large scale. In any case, the dry powder is more practical in storage and transport, and the person skilled in the art has to adjust the amounts of other components, including water, to a lesser extent in the preparation. In the following, the term horse milk also refers to horse milk powder. In one aspect of the invention, mare's milk is used in foods that have a bad image, such as confectionery. A good example is chocolate. It is precisely through the consumption of mare's milk - with beneficial health effects - that the attractiveness of these products is increased. an important category includes food products with sugar, sucrose, as the main ingredient. These are preferably foods that normally contain cow's milk ingredients, preferably cow's milk itself. Although the mare's milk can be used as an adjunct, it is preferred that at least 50% of the cows milk, more preferably at least 75%, most preferably all cows milk be replaced by mare milk. The exact amounts and ratios of the other conventional ingredients are determined per foodstuff and are known to those skilled in the art, and in principle therefore not part of the invention. At most, these amounts are adjusted slightly, depending on the amount of horse milk to be used and the form of administration. In practice, this means that the proportions of the main components do not change. It is quite conceivable that the invention is applied to products containing butter, custard or yoghurt. Because the Ί: raw material price of horse milk is significantly higher than. : that of ubiquitous cow's milk, there is a commercial limitation to the unlimited replacement of cow's milk by horse's milk. Moreover, beneficial effects of mare's milk are often already noticeable at lower doses. For many purposes it is therefore sufficient to replace only part of the cow's milk in the food with: horse's milk. The addition of mare's milk is particularly useful in a chocolate product for the above reasons, especially in chocolate products that already include milk components, white chocolate and milk chocolate. A good example is a chocolate bar, letter, or chocolate sprinkles. A chocolate product according to the invention contains at most 5% vegetable fats other than cocoa butter, in accordance with the European directive for chocolate. A chocolate product in the context of the invention contains at least 15% cocoa constituents on dry weight, preferably more than 20%, most preferably at least 25%. The product preferably contains at least 10% by weight, preferably at least 14% by weight of dry milk components. Preferably at least 50%, more preferably more than 75% of this is made by horse milk. delivered. In other words, a chocolate product according to the invention preferably contains 10 to 40% by weight, in particular 15 to 30% by weight, most preferably 20 to 25% by weight of horse milk. In another aspect, the invention relates to the use of mare's milk in combination with cocoa components in food products or supplements. The invention then focuses on a nutritional composition, including a supplement, that. cocoa components. and horse milk. This combination: can be described as a health-promoting flavor enhancer or enhancer. This preferred composition is hereinafter referred to as cocoa composition. Consideration should be given to applications of a different kind than in the previous case of chocolate bars, where the cocoa mass has undergone further processing steps characteristic of chocolate. "Cocoa components" are understood to mean cocoa cores, cocoa mass, or the (lean) cocoa powder and / or cocoa butter obtained by pressing cocoa mass. In the following, this is all understood by the term "cocoa". Cocoa is now often added to numerous nutritional supplements for taste purposes, often in combination with cow's milk, without this end product being characterized as a chocolate product. It is preferred that cow's milk be replaced in its entirety by horse's milk. The cocoa can be mixed in, but is also often used as a coating for the essential ingredients that often have a bad taste. Preferably at least 75% herein, in particular all cow's milk, is now replaced by horse's milk. The invention does not relate to cosmetic products in which cocoa butter is sometimes used as a lubricant, because the invention lies primarily in the health-promoting effect of horse milk via oral administration. Preferably, the cocoa composition comprises a combination of cocoa powder and mare's milk powder, the composition containing less than 1% by weight, and preferably no moisture. Such a composition, in powder form, is easy in storage, transport and further processing. In such a composition, the cocoa components and mare's milk powder are preferably present in a dry weight ratio of 4: 1 - 1: 2, more preferably 3: 1-1: 1. The precise conditions and ratios are easy to determine for a person skilled in the art, also because the commercially available cocoa compositions for these purposes often already contain cow's milk. It has been found that the previously described benefits of horse milk are particularly noticeable when horse milk - in the form of horse milk powder - is added in an amount of 2 - 300 grams, preferably 5 - 200 grams, more preferably 10 - 100 grams, on based on 500 grams of dry matter food. The above-mentioned ten-fold increase in the concentration of solid components in mare's milk has been taken into account; if horse milk with different amounts is used, the desired amount of that dosage form can be converted via the original amount of horse milk. The use of mare's milk in the preparation is especially recognizable by the starch content, the vitamin C or ascorbic acid content, the lactose content and the raw sugar content of the final food product, in comparison with its cow's milk-containing counterpart. It is emphasized that this does not mean that the other ingredients and quantities thereof exactly match those of the "normal" foodstuff, but it is noted that in the cases explicitly mentioned above, the differences are most noticeable. The most striking is the vitamin C contribution to the product. Although the beneficial effect of vitamin C is not a secret, the horse milk-containing foods according to the invention provide an excellent opportunity to ingest the recommended daily amount of RDA of vitamin C in a simple and especially natural way, and make supplements unnecessary. Horse milk also has a typical fatty acid composition: it appears that a striking amount of C8: 0 capric acid, C10: 0 capric acid, C12: 0 lauric acid, C14: 0 myristic acid and C16: 1 palmitoleic acid are present. The invention also relates to the use of the aforementioned horse milk-containing nutritional or cocoa composition in a (preventive) treatment of eczema, psoriasis and / or bowel disorders, in particular Crohn's disease. The invention also relates to the use of the mare's milk-containing cocoa composition as a flavor enhancer or enhancer of a food (supplement), for example by admixture or by coating the food supplement therewith. The invention can be applied in a broader sense with milk from equidae, in particular also donkey milk. The invention therefore relates more broadly to the use of equine milk, in particular donkey milk and horse milk, more in particular horse milk, in the preparation of the above-mentioned foods. The milk is preferably used in the form of powder, as previously discussed.
